      Caprese Salads on Herbed Crostini with Basalmic Creme

      Serves: 20 | Prep time: 15 minutes

      Ingredients

      • 20 small tomatoes
      • Mozzarella balls (small, cherry-sized)
      • Basil, 1 bunch
      • Basalmic Vinegar, 3 T.
      • Creme Fraiche, 1 cup
      • 1 baguette French Bread, sliced very thinly
      • Olive Oil
      • Italian Seasoning

      Directions

      Slice French bread very thinly and brush lightly with olive oil.  Sprinkle Italian Seasoning and toast at 350 until crisp.  Let cool and set aside.

      Slice tomatoes into rounds (each tomato should make two rounds). Slice mozzarella into small rounds to set on the tomatoes.  Set aside.

      In a small bowl, mix creme fraiche and vinegar together.  Add a small amount of finely chopped basil.

      To assemble, place tomato on crostini.  Place a dollop of basalmic creme on tomato, and top with chiffonaded basil.  Complete with a round of mozzarella.
