      Caesar Salad

      Serves: 10 | Prep time: 15 minutes


      • 1 garlic clove
      • 3/4 cup olive oil
      • 2 large heads of romaine
      • 1/2 tsp salt
      • 2 eggs
      • Juice of 1 large lemon
      • Anchovy paste (optional)
      • 1/2 cup grated parmesan cheese
      • Pepper to taste


      Break romaine into a large bowl. Add a lot of pepper and salt. Dress with remaining garlic oil. Turn so each leaf is glossy. Soft cook the eggs for 1 minute and break them into middle of the salad. Squeeze lemon juice over eggs and mix for the thick and creamy look. Add anchovies. Taste for seasoning. Add cheese and toss. Add croutons.
