Cattlemens Club Twice Baked Potatoes
Serves: 8 | Prep time: 30 minutes
Ingredients
- 5 large potatoes, scrubbed and baked
- 1/3 cup half & half
- 3 tbsp green onions or chives, minced
- 4 strips bacon, fried and crumbled
- 1/4 tsp parsley
- 1 cup cheddar cheese, grated
- 1 1/2 - 2 tsp salt
- 1/2 tsp pepper
- 1/4 tsp garlic salt
- 1 egg, beaten
- 1/3 cup butter
- 1/2 cup mushrooms, sliced & sauted in butter
- 1 cup sour cream
Directions
Bake potatoes for 1 hour at 350° or until tender in center. Cut in half length-wise. Scoop out potatoes carefully as to not tear the skins. Mash potatoes with mixer. Add half & half and continue to beat until smooth. Add all other ingredients and mix well. Mixture should be somewhat softer that regular mashed potatoes to prevent drying when baking again. Fill skin shells with mashed potato mixture and arrange on a cookie sheet. Top with cheese. Bake at 300° for 20 minutes.

I have made these before. They are so good and you can add garlic, cheese, spices, mushrooms right on top. Great for dinner parties.
