Chile Con Carne Verde
Serves: 6 | Prep time: 15 minutes
Ingredients
- 3lbs beef chuck
- 1/4 cup dripping or lard
- 3 garlic cloves, pressed
- 2 cups chopped canned or fresh peeled tomatoes
- 2 cups broth from meat
- 2 cups canned green chilies
Directions
Simmer meat in ample water until tender but not well done. Cut into small cubes and saute in fat. Add chopped chilies, garlic, tomatoes, and broth. Simmer slowly, covered, until meat is done. Season with salt to taste. Better the second day. Serve with tortillas.
