Peel eggplant. Cut into 1/4 inch slices. Fry in skillet with oil until brown on both sides. Drain well on paper. Make a layer of eggplant in shallow baking dish. Cover with some tomato sauce, a little of the Parmesan, few slices of mozzarella. Repeat layers until all ingredients are gone and ending with mozzarella. Bake uncovered at 400° for 15 minutes.
