    • Thanksgiving Dinner Recipes Ham

    • Horseradish Honey Ham

by Beverly Loomis of Ithaca, Michigan
1 boneless fully cooked ham (5 to 7 pounds)
      1/4 cup honey, warmed
      1/8 tsp ground cloves
      1 cup packed brown sugar
      1/2 cup prepared horseradish
      1/4 cup lemon juice
Cut ham into 1/4-in. slices and tie with kitchen string. Place ham on a rack in a shallow roasting pan. Combine honey and cloves; drizzle over ham. Bake, uncovered, at 325 degrees for 1-1/2 to 2 hours or until a meat thermometer reads 140 degrees and ham is heated through, basting often with drippings. Meanwhile, combine the brown sugar, horseradish and lemon juice. Increase oven temperature to 400 degrees. Baste ham with brown sugar sauce so sauce penetrates between slices. Bake, uncovered, for 15 to 20 minutes. Yields 15 to 18 servings.

      Ham with Maple Gravy

by Sue Ward of Thunder Bay, Ontario
1 fully cooked boneless ham (6 pounds)
      30 whole cloves
      3/4 cup maple syrup, divided
      4 tsp ground mustard
      2 cups apple juice
      3 tablespoons cornstarch
      3 tablespoons water
      2 tablespoons butter
6 medium tart apples, cored and cut into 1/2-inch slices
Place ham on a rack in a shallow roasting pan. Score the surface of the ham, making diamond shapes 1/2 in. deep; insert a clove in each diamond. Combine 1/2 cup maple syrup and mustard; pour over ham. Pour apple juice into the roasting pan. Bake at 325 degrees for 1-1/2 to 2 hours or until a meat thermometer reads 140 degrees, basting frequently. Remove ham and keep warm. Transfer the pan juices to a saucepan. Combine cornstarch and water until smooth; add to saucepan. Bring to a boil;cook and stir for 1 minute or until thickened. Meanwhile, in a skillet, melt butter over medium heat. Add apples and remaining maple syrup. Cover and cook for 10 to 15 minutes, stirring occasionally. Slice ham; serve with the apples and gravy. Yields 14 servings.
