    • Thanksgiving Dinner Recipes Zucchini Pie

    • Zucchini Pie
      3 medium zucchini or 5 small zucchini, thinly sliced
      1 8-oz tube refrigerated crescent rolls
      2 garlic cloves, minced
      2 tablespoons butter or margarine
      2-1/2 tsp dried parsley
      1/4 tsp salt
      1/4 tsp pepper
      1-1/2 cups (6-oz) shredded Monterey Jack cheese, divided
      2 eggs, lightly beaten
      Grease bottom of a 9-in pie dish. Separate crescent rolls into 8 separate triangles and place dough inside dish to make crust with the points toward the center. Press onto the bottom and connect perforations.
      In a skillet, over med-high heat, saute the zucchini and garlic in butter. Add the parsley, salt, pepper, and 1 cup of cheese. Pour into crust. Top with egg mixture. Sprinkle remaining cheese over top. Cover only edges of pie with foil. Bake at 375 degrees F for 25-30 minutes.
