Lemon Blossoms

Lemon Blossoms
Serves: 0 | Prep time: minutes
Ingredients
- 1 18.25oz pkg. yellow cake mix
- 1 3.4 pkg. instant lemon pudding mix
- 4 large eggs
- 3/4 cup vegetable oil
- Zest of 1 lemon
- Glaze
- 4 cups confectioners sugar, sifted
- 1/3 cup fresh lemon juice
- Zest from 2 lemons
- 3 tablespoons vegetable oil
- 3 tablespoon water
Directions
Preheat the oven to 350 degrees.
Spray miniature muffin pans with vegetable oil cooking spray. (Wipe off excess oil on top of muffin pans.)
With an electric mixer, combine the cake mix, pudding mix, eggs, oil, and zest and blend well for approx. 2 minutes. Fill each muffin pan halfway and bake for 10-12 minutes. Let the cupcakes rest in their pans until completely cool. When cool, carefully pop the cupcakes out onto a sheet pan.
Glaze
In a microwavable bowl, combine the sugar, lemon juice, zest, oil, and water. Mix with a spoon until smooth.Hint: Just before dipping the cupcakes in the glaze, heat the glaze in the microwave for approx. 30 seconds to thin out slightly for easier coating.
With either your clean fingers, or a spoon, dip the cupcakes into the glaze, covering as much of the cupcake as possible. Place the cupcakes on wire racks with waxed paper underneath to catch any drips. Let the glaze set thoroughly, about 1 hour, before storing in air tight containers.
Make approx. 5 1/2 dozen Lemon Blossoms

- Cut bananas into 3 chunks each. Sprinkle with lemon and confectioners sugar. Let stand for 20 minutes. Mix biscuit mix, sugar, eggs, and milk. Dip bananas into batter and fry in deep skillet until brown. Serve with maple syrup. more
