Banana Nut Bread
Serves: 6 | Prep time: 15 minutes
Ingredients
- 1/2 cup cooking oil
- 1 cup sugar
- 3 ripe bananas, mashed
- 2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 salt
- 3 tbsp milk
- 1/2 tsp vanilla extract
- 1/2 cup chopped nuts (optional)
Directions
Beat oil & sugar together. Add eggs and banana pulp and beat well. Add dry ingredients, milk, and vanilla. Mix very well. Stir in nuts. Pour into greased and floured loaf pan (9x5x3). Bake 350° for about 1 hour. Cool and store overnight before cutting.

- Cut bananas into 3 chunks each. Sprinkle with lemon and confectioners sugar. Let stand for 20 minutes. Mix biscuit mix, sugar, eggs, and milk. Dip bananas into batter and fry in deep skillet until brown. Serve with maple syrup. more
