      Tasty Stuffed Shells with Spinach

      Serves: 0 | Prep time: minutes

      Ingredients

      • 2 lbs ricotta cheese
      • 1 egg
      • 1/2 cup grated parmesan cheese
      • 1/2 cup frozen spinach, thawed
      • 1 teaspoon parsley
      • Salt and pepper to taste
      • 2 jars spaghetti sauce
      • 1 box jumbo shells
      • 2 cups mozzarella

      Directions

      Preheat oven to 350° F. Pour 1/3 of a jar of spaghetti sauce into a greased 9-in x 13-in baking dish to cover bottom. Prepare shells according to box. In a medium bowl, combine ricotta, eggs, 1-1/2 cups mozzarella, parmesan, spinach, parsley, salt and pepper. Stuff pasta shells with cheese mixture. Align stuff shells in baking dish. Pour spaghetti sauce over shells and add remaining mozzarella cheese. Bake, uncovered for 35 to 40 minutes.
