      Savory Oven Pot Roast

      Serves: 10 | Prep time: 20 minutes

      Ingredients

      • 3lb beef bottom round or rump
      • salt, pepper, pinch of nutmeg
      • 6 med red potatoes, scrubbed and cubed
      • 2 cups carrots
      • 3 celery ribs, chopped
      • 1 clove garlic, minced
      • 2 cups hot beef bouillon
      • 2 tbsp tomato paste
      • 1 tbsp sugar
      • 1 tbsp vinegar
      • 1 tsp thyme
      • 1 bay leaf
      • 1 tps parsley

      Directions

      Add onions, potatoes, carrots, and celery to slow cooker. Add beef to the top. Spread tomato paste over beef. Add remaining ingredients. Cook on high for 1 hour. Reduce heat to low and cook for 7 hours.
