      Vichyssoise

      Serves: 8 | Prep time: 20 minutes

      Ingredients

      • 4 leeks, white part only
      • 1 medium onion
      • 5 medium potatoes
      • 4 cups chicken broth
      • 1 tbsp salt
      • 2 cups milk
      • 2 cups medium cream
      • 1 cup heavy cream
      • 2 tbsp sweet butter

      Directions

      FYI- this soup is served cold.
      Finely slice the white part of the leeks & onion and brown very lightly in the sweet butter; then add potatoes that also are sliced finely. Add water and salt. Boil gently for 35 to 40 minutes. Whirl in a blender. Return to heat and add milk and medium cream. Season to taste and bring to a boil. Cool and then rub through a very fine strainer. When soup is cold, add the heavy cream. Chill. Add finely chopped chives.
