      Salade Nicoise

      Serves: 8 | Prep time: 20 minutes

      Ingredients

      • 1 small crisp lettuce
      • 1lb tomatoes
      • 2 tbsp chopped fresh parsley
      • 1/2 english cucumber
      • 1 small red onion, sliced
      • 1 1/2 cups greenbeans, ends trimmed, cooked
      • 1 small red bell pepper, cored and deseeded
      • 6tbsp french dressing
      • 3 hard cooked eggs
      • 2oz can of anchovies
      • 12 black olives, pitted
      • 7 oz can of tuna fish, drained

      Directions

      Place the lettuce leaves in a mixing bowl. Cut the tomatoes into wedges and flake the tuna fish. Put both into the bowl with the parsley. Cut the cucumber in half lengthwise, then cut into slices. Slice the onion. Add the cucumber and onion to the bowl. Cut the green beans in half. Chop the red bell pepper. Add them to the bowl. Pour over the french dressing and toss thoroughly, then spoon into a salad bowl to serve. Cut the eggs into quarters, and arrange over the top with the anchovies. Scatter with the olives.
