      Summer Fruit Salad

      Serves: 4 | Prep time: 15 minutes

      Ingredients

      • 1/3 cup superfine sugar
      • 1/3 cup water
      • 2 cups redcurrants, stripped from their stalks
      • 2 tsp arrowroot
      • 2 tbsp port
      • 1 cup blackberries
      • 1 cup blueberries
      • 3/4 cup strawberries
      • 1 1/2 cups raspberries
      • Grated rind and juice from 1 orange

      Directions

      Put the sugar, water, and grated orange rind into a pan and heat slowly, stirring until the sugar has dissolved. Add the red currants and orange juice. Bring to a bowl and simmer gently for 2-3 minutes. Strain the fruit, reserving the syrup, and put into a bowl. Blend the arrowroot with a little water. Return the syrup to the pan. Add the arrowroot and bring to a boil, stirring until thickened. Add the port and mix together well, then pour over the red currants in the bowl. Add the berries. Mix together and let cool. Serve in individual glass dishes with whipped cream.
