Roasted Pepper Party Pasta Salad
Serves: 8 | Prep time: minutes
Ingredients
- 16 ounces penne pasta (or spirals, tiny shell pasta, bowties)
- 3 medium red bell pepper (or mix up with yellow and orange as well)
- 1/2 cup + 2 tablespoons extra virgin olive oil
- 2 large clove garlic, crushed
- 2 medium zucchinis, cubed
- 4 tablespoons finely shredded fresh basil
- 2 tablespoons red wine or pomegranate vinegar
- salt and pepper to taste
Directions
Cook pasta according to directions, drain and set aside.
Roast peppers under broiler until skins blister and blacken, transfer to plastic bag, and let steam for 10 minutes. Peel off skins and discard along with stems and seeds. Cut peppers into ½-inch cubes. Combine with the pasta in a large bowl.
Heat 2 tablespoons olive oil in skillet, add garlic and zucchini, cook over medium-high heat for 4-5 minutes. Stir into the bowl with the pasta and pepper.
In a small bowl, whisk together the olive oil, vinegar, salt, pepper and basil. Pour over the pasta salad and toss to coat. Sprinkle with the shredded basil.
