      Upside Down Pumpkin Pie

      Serves: 18 | Prep time: 15 minutes

      Ingredients

      • 1 large (20 oz.) can pumpkin
      • 1 1/4 cup sugar
      • 1/2 tsp. ground ginger
      • 1 tsp. ground nutmeg
      • 1 12-oz. can evaporated milk
      • 3 eggs, beaten
      • 1 box yellow cake mix
      • 1 cup chopped nuts (pecans or walnuts)
      • 1 cup unsalted butter, melted
      • 2 tsp cinnamon

      Directions

      Mix pumpkin, sugar, cinnamon, ginger, nutmeg, evaporated milk and eggs in a large bowl. Pour into greased 9x13-inch baking pan. Sprinkle dry cake mix evenly over pumpkin mixture. Top with nuts. Drizzle melted butter evenly over all. Bake at 350° for 1 hour or until toothpick comes out clean.
